🔬 What is FFA?
FFA (Free Fatty Acid) measures the extent of hydrolysis in oils. High FFA levels indicate breakdown of triglycerides, often due to aging or poor storage.
⚠️ FFA & Rancidity
- Higher FFA = Higher chance of rancidity.
- Rancid oils taste and smell bad, and can be harmful to health.
- Fresh wood-pressed oils generally have low FFA when processed and stored correctly.
- Refined oils have extremely low FFA, but lose much of their nutrients during processing.
